Eggy Fall Breakfast Oats

Asian Pear Oatmeal V

Every other morning, I treat myself to a delicious bowl of oatmeal with seasonal fruit, or just plain if I’m watching my sugar intake closely.  My grandmother made this most mornings, making it a fond memory as well as a practical and healthy way to start the day.

Today’s version was especially delicious.  Fall was in the air for the first time this year and our Asian Pears are dropping like crazy.  Sounded like a perfect day for this bowl of goodness – and it was!

Cut up half an asian pear or apple into small bite sizes, saving the other half for a midday snack. Add to 1 Cup of water and 1/2 Cup of Oats with 1/4 teaspoon of cinnamon (or more) and 1/2 scoop of stevia for additional sweetening (or coconut sugar).  Bring to boil and simmer for 5 minutes.  Add 1 or 2 egg whites (photo shown was made with 3 which explains the pudding like texture) and whisk quickly for a full minute.  The more briskly you stir, the more creamy it will be. Be careful of going too high on the protein. Unless you’re lifting or in special need of extra protein, 1 egg white will do ya.

Top with milk of choice and Welcome to Fall!  It’s going to be a beautiful one.
