Clean & Easy – Hummus

A quick, easy, delicious and nutritious recipe – Just the thing when you only have minutes before guests arrive.  Great for sandwich spreads and dips.  Easily varied by adding fire roasted red peppers, chipotle peppers or roasted garlic!

Ingredients –
15.5 ounces canned Garbanzo Beans, juice set aside
1 Clove Garlic, chopped
1/3 Large Lemon, juiced
1 Tablespoon Tahini
1/4 Cup Garbanzo Bean Juice
1/8 teaspoon Salt
1/4 teaspoon Black Pepper
1 Tablespoon Olive Oil
Paprika, optional

Directions –
Combine all ingredients in a high-powered blender. Add additional lemon and salt as needed.  Serve in decorative bowl with additional olive oil and paprika drizzled over the top.  A great dip served with celery, carrots and red peppers. It also makes a wonderful spread, adding protein, texture and flavor to an otherwise uninspired sandwich!
