My dear husband created this “slaw” avoiding mayo and other heavy flavors. It’s bright, tasty and full of excellent fiber. It works well as a taco topping, a base for salad or a side to pinto beans and grilled chicken. The combination of lime and red pepper flakes makes it quite a flavor treat! During the reboot days of no added fats, just remove the oil to be compliant or enjoy fully on the full fat days!
1/2 head cabbage sliced thinly
1 medium carrot peeled and shredded (substitute sweet peppers as needed)
Juice of one lime (start with half and add to taste)
1 tsp avocado oil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes
Chop or shred cabbage and place in large bowl. In small bowl or jar, combine the rest of the ingredients and shake or whisk to combine. Pour dressing over vegetables and toss. Let sit for a few minutes to gel.
