Beans and Slaw – for the tough days of Reboot

Wednesdays and Thursdays of Reboot can be rough!! Change up the grilled chicken breast and broccoli to avoid burnout.

Shred or chop cabbage, as much as you like. Chop and add:

  • Yellow or red onion
  • Fresh lime juice
  • Sweet pepper of your choice (red, orange, yellow, green)
  • Hot pepper of choice (optional: jalapeno, anaheim)
  • Sliced green onion
  • Cilantro
  • Hot sauce

Squeeze fresh lime juice over the top of chopped veggies, add a touch of salt and as much pepper as you like. Top with your favorite hot sauce (tomato salsa is limited so check your day’s allowances). Serve with pintos or refried beans*. For Friday-Sunday, a splash of avocado oil on the slaw takes it up a notch!

Refried beans can be homemade without oil or come canned (watch the label for toxic ingredients and added fats).
